Distilled in small batches here in Padstow, our Oak-Aged Rum begins its life similarly to our original Gold Reserve — before taking a slow, indulgent rest in Burgundian French oak barrels, originally used for ageing Pinot Noir in the Crouch Valley in Essex. It’s from this seasoned oak that the rum draws its mellow vanillins, gentle tannins and softly spiced character.
The result is a beautifully dry, rounded spirit with a depth flavour reminiscent of whisky. Warm, refined and subtly layered, it’s made for unhurried moments: a rum to sit with, savour, and let unfold.
Authentic small-batch Cornish rum, shaped by craft, patience, and the subtle influences of French oak and sea air.
Tasting Notes
Nose: Soft vanilla and toasted oak, with a hint of dried fruit overlaid with light demerara notes.
Palate: Dry and harmonious; savoury oakiness and creamy texture with a touch of pepper.
Finish: Dry, smooth and savoury, with a lingering vanilla freshness.
Serving Suggestions
- Sip neat or over a single cube of ice to appreciate the influence of the French oak
- Pair with premium ginger ale or cola for a longer serve that is both rich and lightly oaky.
- Try as a rum-led twist on an Old Fashioned for something elegant and warming.

I’m really excited about how this has evolved. It underlines the care over the steady molasses ferment, the pot-still and column-still blending. In short, I could not have dreamt it would taste this good.
