Distilled at South Quay in Padstow. Rather than using an existing rum as an anchor, we have distilled a new recipe to create a spirit with its own character. Vanilla pods, Cardamom, Star Anise and Cinnamon are partnered with more lively citrus notes - with whole oranges and limes in the still, creating a vital balance. This our second batch benefited from longer pre-infusion of the botanicals, giving a marked uplift in richness, especially of the vanilla notes, while a few gentle recipe tweaks enhanced overall balance. Please let us know what you think!

We finish this rum with only a whisper of sweetness - and consequently it not only sips beautifully, but matches all those traditional mixers with its peppery spiciness.
