The Maritime Edit Batch #002 - Distilled in Padstow, September 2025.

Always the experimenter, our distiller, David McWilliam, has a special edition to share with you. Taking the best elements of our St George's Well Original and Hawker's Cove Rose recipes, he has added judicious quantities of additional coastal botanicals - which wouldn't be hard to guess - to create a soft, fresh spirit that simply sings in a G&T.

This is a limited experimental batch, available only in refill pouches.

Early tasters have commented on its smoothness and fragrance, as well as its extraordinary potential in a Dry Martini.

"It's always exciting to distil a new recipe, to see how the flavours marry. I love new taste experiences, but this recipe comes from both familiar and newly discovered plants and botanicals.

With complex recipes, it's not always easy to see how elements will work together: I often find that I need to sit with an idea for a little while. The best results come with a wee bit more patience and reserve than I'm accustomed to. This Maritime Edit is just that, full and at the same time delicate with no one flavour dominating: crisp, fresh juniper, delicate citrus, botanical freshness."

Local Ingredients

Padstow Gin is made from GNS (grain-based neutral spirit), not bought-in, but from 100% finest local Cornish barley, grown at Tregirls farm in Padstow. The barley fields overlook the Camel Estuary above the beach at St George’s Well, swept daily with the ocean breeze and covered in salty sea mist.

Unique Botanicals

We blend juniper, citrus and pepper with local Alexanders, an ancient coastal plant full of green, iodine freshness.
