The Harbour Edition Batch #001 - Distilled in Padstow, October 2025.

Inspired by the ever-changing tides of the Camel Estuary, this refined coastal gin captures the essence of our North Cornwall shoreline in every glass. Built upon the same foundation of juniper, citrus and local alexanders as our award-winning St George’s Well original recipe gin, The Harbour Edition brings a distinctive maritime character — bright, herbaceous, and delicately briny — shaped by additional coastal botanicals such as marsh samphire.

Expect crisp, green notes balanced by gentle spice and a subtle savoury depth that lingers like the unmistakable aroma of a sea breeze. Exceptionally balanced and deeply evocative, it’s the taste of Padstow life — bottled.

Serving suggestion:
Best enjoyed with a premium tonic and a twist of grapefruit peel, or as the perfect base for a coastal-inspired Martini.

"A huge thank you to everyone who invested their time and taste buds in trying The Maritime Edit. Your honest feedback helped us refine and perfect this recipe, and turn a small experiment into The Harbour Edition. I couldn’t be happier with where we’ve landed.”

David McWilliam
Head Distiller

Local Ingredients

Padstow Gin is made from GNS (grain-based neutral spirit), not bought-in, but from 100% finest local Cornish barley, grown at Tregirls farm in Padstow. The barley fields overlook the Camel Estuary above the beach at St George’s Well, swept daily with the ocean breeze and covered in salty sea mist.

Unique Botanicals

We blend juniper, citrus and pepper with local Alexanders, an ancient coastal plant full of green, iodine freshness.

What Our Customers Think

We put our heart and soul into crafting a luxury spirit that invokes memories of the beautiful Cornish coast and countryside surrounding Padstow, so customer feedback is something we are always keen to receive.

Mixology

Our Top 5 Negroni Recipes — Stirring Things Up for Negroni Week

Negroni Week is an annual celebration of one of the world’s most versatile cocktails, and at our Duke Street bar in Padstow, we’ve been shaking (or rather stirring) up plenty of inspiration. So I thought I'd share five of our favourite ways to mix a Negroni at home.

THE ULTIMATE RHUBARB MARTINI

After a season away, the Rhubarb Martini is back on the menu at 17 Duke Street. Just in time for Valentine's Day, this beautiful, long-drinking cocktail is all about flavour and balance.

The Spiced Orange Negroni

When made with our Spiced Cranberry & Orange Gin, this favourite amongst our Duke Street regulars takes on a roundness and depth that lands it firmly in the Autumn/Winter Cocktails category. I always think of this as a 'Halloween onwards' drink, and it definitely has a hint of the festive season about it...
