The 2025 release of Padstow Ginger Liqueur is timed perfectly for winter sipping, for Christmas fireside conversation. It is the warming liqueur that counters the seasonal chill with its delicious fiery warmth.
At its heart is not vodka, but our wonderful new Harbour Edition gin recipe - and we've chosen this in order to give both richness and complexity that counter the intensity of fresh root ginger. The recipe was in fact refined over the 17 Duke Street bar one evening - as we meddled and messed with fresh lime and sugar in different proportions until the balance was just right, and we had a unanimous, if boozy thumbs up.
On the nose, you get that unmistakable freshness: lively, aromatic, slightly citrussy. On the palate, a soft sweetness opens the show before the ginger steps forward: warming, peppered, and confident. The finish is long, smooth and quietly persistent.
Bottled at 20% abv, it’s strong enough to carry the spice and character, but measured enough to sip neat after supper.
Two Cocktails That Let Padstow Ginger Liqueur Shine
The Padstow Mule
A Cornish take on a classic — crisp, bright and made for easy sipping.
Ingredients:
- 25ml Padstow Vodka 'Gun Point'
- 25ml Padstow Ginger Liqueur
- 12g fresh lime juice
- Top up with Navas Ginger Ale
- 1 lime wedge, 1 fresh mint sprig
Method:
Build in a highball, stirring before you add the ginger beer - and then slowly adding the ice at the end. Finish with the mint sprig and lime wedge. Simple, refreshing, and unmistakably Padstow. The lime sharpens, the ginger lifts, and the vodka brings its quiet coastal backbone.
The South Quay
A new winter-evening shortie — spice, heat, and the comfort of Cornish rum.
Ingredients:
- 22g Padstow Rum Gold Reserve
- 22g Padstow Rum Oak-Aged Reserve
- 22g Padstow Ginger Liqueur
- 1 Lime wedge
Method: Mix all the ingredients in a mixing glass with plenty of ice for 30 seconds. Single strain into a rocks glass containing three ice cubes. Finish with the lime wedge.
This rich, punchy cocktail was previously known as a Ginger Fringe, named after the 2025 Padstow Christmas Fayre 'Gin Fringe' in our new South Quay distillery. What better - and slightly more reverent - name is there than The South Quay? Taste-wise, it incorporates the delicious vanilla savour of our newest Oak-Aged Reserve rum alongside the demerara richness of the Gold Reserve. Together, they complement the Ginger Liqueur so well.
