Padstow Verde is our new bitter liqueur, created from a long-standing fascination with the structure of a Negroni and the delicate tension between bitter, sweet and aromatic.

For years, Alexanders have played a quiet but defining role in our spirits. Growing predominantly near the coast, they bring a distinctive green, iodine freshness with subtle savoury character — an unmistakable note of place. The idea of building a herbaceous bitter liqueur around these beautiful plants has long been circulating in my mind. Something familiar in form, but genuinely ours.

After countless iterations and plenty of honest feedback from those standing on the other side of the bar, it’s ready.

At 28% ABV, Padstow Verde is built on our soft barley spirit distilled from the golden harvest at Tregirls Farm here in Padstow. It is layered with ten botanicals including bitter gentian, citrus peel, Alexanders, wormwood, ginseng, star anise and pink peppercorns.

The result is complex and structured, with deliberate bitterness balanced by subtle sweetness and spice.

And yes — it’s green.

A deep emerald hue, inspired by the Alexanders of course, but in a natural chlorophyll extract.

We could have made it red, but why fight with nature?

200ml premium tonic
A small sprig of rosemary
